Vanilla is a spice obtained from the capsules of various species of vanilla. Vanilla first came to Europe from Mexico in the 1800s. Today, vanilla is cultivated on plantations. When harvested, the vanilla pods are dried so that their colour changes from green to the brown shade we know. The oily seeds contain the most flavour, but the delicious vanilla taste can also be extracted by boiling the pod.
